This recipe is a great way to use up stale bread, and is a big hit in the Hillfarm household with our young budding chefs. Serve as a starter or canapé with a homemade hummus dip, along with a glass of cool, crisp white wine.

Serves Serves 4-8



  1. Preheat the oven to 200°C.
  2. Slice the ciabatta, and brush with Hillfarm rapeseed oil on both sides. Season with salt and pepper.
  3. Place on a baking tray and bake in the oven for 5 to 6 minutes, until golden brown and crunchy.
  4. Once cooked, serve with pesto and sliced cherry tomatoes, topped with fresh basil and grated Parmesan.
