Crispy Roast Potatoes

We think hillfarm rapeseed oil is simply the best thing to roast your potatoes in! We sometimes add roasted red onions and thyme or other herbs to make a change!

  • 1kg potatoes
  • 4 tbsp hillfarm cold press rapeseed oil
  • Sea salt & freshly ground pepper


  1. Peel and cut the potatoes into 4 even-sized pieces if they are medium size, 2-3 if smaller and parboil them.
  2. Drain and shake the potatoes in the pan so that the edges are scuffed.
  3. Pre-heat oil in a hot oven (200C or Gas mark 6). Place the potatoes in the oil and toss them covering each well.
  4. Sprinkle with sea salt and freshly ground pepper, and return to the oven for 40 minutes or until crispy.
