Quinoa Salad

This vibrant salad is perfect for taking to gatherings with friends and family, whether it’s a summer barbeque, evening meal or the annual Boxing Day get-together. Vary the ingredients according to what’s in season, or what you can find in your fridge.

Serves 2-4


  • 1 tablespoon hillfarm rapeseed oil
  • 1 cup quinoa
  • 2 cups boiling water
  • 8 cherry tomatoes, quartered
  • Half a cucumber, cut into cubes
  • Half a red onion, chopped
  • Handful of pine nuts, toasted
  • Juice of half a lime
  • Handful of fresh basil, torn
  • Salt and pepper, to taste


  1. Put the quinoa into a saucepan or bowl with a lid. Pour the boiling water over the top, and leave for 15 – 20 minutes with the lid on
  2. Using your hands or two forks, gently combine all the ingredients
  3. Keep in the fridge for up to 4 days
