Simple Tomato Soup

With its classic flavours and inviting colour, this soup is a firm family favourite here at Hillfarm, especially served with freshly-baked bread. Double the amounts and freeze half to prepare for those days when you don’t feel like cooking.

Serves Serves 4


  • 2 x 400g tins of chopped tomatoes
  • 1 small potato, peeled and cubed
  • 2 tbsp tomato purée
  • 1 tsp castor sugar
  • 1 onion, peeled and finely chopped
  • 1 clove garlic, peeled and finely chopped
  • 140 ml Hillfarm coldpressed rapeseed oil
  • 425 ml vegetable or chicken stock
  • Salt and pepper, to taste


  1. Heat the oil in a pan and soften the onion, potato and garlic over moderate heat, stirring to ensure they don’t change colour
  2. Add the tomatoes, tomato puree, castor sugar, stock and seasoning
  3. Simmer for 20 minutes, then blend with a hand blender
  4. Serve immediately, or freeze for up to 3 months
