Fudgy Chocolate Brownies

Ingredients

  • 200g dark chocolate (70% cocoa), chopped
  • 150ml cold-pressed rapeseed oil
  • 250g caster sugar
  • 100g light brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 75g plain flour
  • 50g cocoa powder
  • ½ tsp sea salt
  • 100g dark chocolate chips or chopped chocolate (optional)
  • 75g chopped walnuts or pecans (optional)

Makes: 16 brownies

Method

  1. Preheat the oven to 180°C (160°C fan). Line a 20cm square baking tin with baking parchment.
  2. Melt the dark chocolate in a heatproof bowl over a pan of simmering water. Leave to cool slightly.
  3. Whisk together the rapeseed oil, caster sugar, brown sugar, eggs and vanilla until smooth, then stir in the melted chocolate.
  4. Sift in the flour, cocoa powder and salt, then gently fold until just combined. Don't overmix.
  5. Fold in the chocolate chips and nuts, if using.
  6. Pour into the prepared tin and level the surface.
  7. Bake for 25–30 minutes. The edges should be set while the centre still has a slight wobble.
  8. Cool completely in the tin before cutting into squares.

Baker's Tip

For an extra-decadent finish, sprinkle a pinch of flaky sea salt over the batter just before baking.
