A sophisticated starter or light lunch, this Smoked Duck Waldorf Salad by Julien Jordan blends classic Waldorf elements like apple and walnuts with rich smoked duck, crunchy celeriac, and a creamy Hillfarm rapeseed oil mayonnaise dressing.
Instructions
- Grate the celeriac and apple and dice the celery.
- Crush the walnuts and mix into 3 tablespoons hillfarm mayonnaise.
- Stir in the celeriac, apple, celery and raisins.
- Dice the duck into generous cubes mix with two tablespoons of hillfarm mayonnaise and add the chopped tarragon.
- Finally combine both sets of ingredients and serve with mustard and cress salad.
