Quarter, deseed, and dice tomatoes. Combine with onion and coriander. Mix with oil and lime juice. Season generously with salt and pepper. Set aside to develop flavour (ideally for at least an hour).

Heat a ridged griddle pan until smoking hot. Brush tuna steaks with oil, season well, and sear for 1 minute each side (rare) or 1½ minutes (medium).
