Roasted White Fish with Tomatoes, Peppers and Mozzarella

Ingredients

  • 600g white fish fillets (cod, haddock, or pollock)
  • 2 tbsp rapeseed oil
  • 20-25 cherry tomatoes, halved
  • 1 yellow pepper, sliced
  • 125g mozzarella pearls, halved
  • Fresh basil leaves
  • Sea salt and freshly ground black pepper

A simple, protein-packed roasted fish dish.

Instructions:

  1. Preheat oven to 190°C.

  2. Lay fish skin-side down in an ovenproof dish. Scatter tomatoes, pepper, mozzarella, and basil over the fish.

  3. Drizzle with rapeseed oil, season, and bake for 12-15 minutes.

  4. Serve with a green salad of peppery leaves.
